It’s been a few days since I’ve posted…[don’t tell, but we’ve been eating ham/potatoes at my mother-in-laws and take-out at home]. But last night we hosted several out-of-town guests from Turf’s Up Radio, and after hearing Hubby talk about venison for the last year, they were excited to have venison for dinner. We decided on venison enchiladas made from a backstrap of this year’s doe fawn (nice and tender and tasty). Flour tortillas wrapping sautéed onions, red/orange/yellow peppers and mushrooms, and of course sautéed venison bites and enchilada sauce. We went light on the enchilada sauce this time to ensure the top of the tortillas got nice and crispy on top. The meal was a huge hit. One of our guests claimed “The best meal I’ve had in a long time. You should open up a restaurant.”
And yes, our Christmas tree is still up.
