It may not look like much, but it was delicious and easy - most items I had in my pantry (noodles, diced tomatoes, canned corn, black beans, chicken broth) and then I jazzed it up with the perishables I had on hand (chopped onion, bell pepper and mushrooms). Swapped out the ground beef for ground venison, and added extra taco seasoning because of all the extra veggies.
Photo is leftovers (day 2). I served it on day 1 with fresh fruit!
