Standard fish house breakfast! Venison bacon, and venison bacon/scrambled egg/veggie burritos. (Veggies today: onion, mushroom & orange pepper.) This bacon is homemade, half pork, half venison, smoked on our very own smoker this fall. Bacon flavor is delicious, but learnings from our first time making homemade bacon: (1) We may have over ground it just a bit, removing some of the texture that we like in the finished product. Don’t grind it so fine next time. (2) Don’t smoke it to full cooked, leave it a bit undercooked in the smoking process, so that when you cook it before you eat it, it’s not so much like jerky. Still delicious!
