Last Minute Breakfast Egg Bake

We woke up this morning with the sniffles and didn't feel like making our usual (pancakes, venison bacon & eggs). I looked in the fridge & pantry and found:

-meat (in this case raw venison sausage, leftover from when I browned some of it for pizza toppings the other night)

-cheese

-veggies (green pepper, onion)

-almost old bread


With that in hand, I whipped up a "no need to make ahead" egg casserole that was a hit with the family. The beauty of this recipe is you can use any meat/cheese/veggie/bread that you have on hand, AND it didn't require me to think ahead and make it the night before.


  1. Brown meat.

  2. Sauté veggies in meat fat or olive oil.

  3. Preheat oven to 350°F.

  4. Grease a glass 9x13 pan.

  5. Scramble 6 eggs in a large bowl.

  6. Add 1 cup of shredded cheese.

  7. Add in browned meat and sautéed veggies.

  8. Add 2 slices of diced bread.

  9. Add 3Tbsps milk.

  10. Add 1/2tsp garlic powder and salt & pepper to taste.

  11. Pour mixture into greased pan.

  12. Bake 20-25min or until eggs are cooked through.


Serve with fruit!
