I made ground venison meatballs yesterday as part of an attempt to meal prep. They were easy to make and even easier to reheat for dinner tonight!
Make-Ahead Meatballs
-1lb ground venison
-1/2 cup chopped onion
-1/2 cup shredded cheese (I used a Colby mix, but you could use Parmesan or whatever you have)
-1/2 cup breadcrumbs/Panko
-1/2 Tbsp Italian seasoning
Combine. Form into 16 meatballs and bake on a greased pan for 17-20min or until they are cooked through and slightly browned. Eat while hot, or cool and refrigerate for a day or two. Would make great lunches!
For dinner tonight, we warmed them up in the microwave and served them with hot marinara on your bread of choice - Texas toast, tortilla or bun. Could also be served on spaghetti squash or zoodles or noodles. Add cheese if desired (it's always desired at our house) or other favorite toppings.
