New recipe for me here - but it was actually a big success with the girls! It's a busy week here, so I was looking for "easy" weeknight meals.
Tonight, I used the last pound of non-spicy ground venison sausage to make this delicious soup. Before I headed to daycare to pick them up, I browned the sausage (leaving big chunks), added Italian seasoning (since this sausage was pretty unflavored), and sautéed the onions and garlic. I added the white wine and simmered according to the directions. Then I added the can of crushed tomatoes and carton of chicken broth. I heated it up to a boil, but turned it off and covered it before I went to get the kids.
When I got home, it was easy to reheat to a boil, simmer for 15min, add the cheese tortellini for 5min, and the spinach for 1min.
Served with naan bread from Costco (and in one bowl I added cheese-it's!), it was overall a success. We have half the pot leftover for tomorrow. Will definitely make again.
